In a heavy sauce pan mix:
1 Tbls Maine Maple Syrup
1/4 cup of any wine or fruit liquor you would drink (optional)
1/2 cup Orange Marmalade and the juice of a lime
A pinch each of allspice, ground clove, cinnamon and ground ginger
Cook, while whisking, over medium heat until reduced to the consistency you want for your finished sauce
Serve over grilled salmon or tuna, chicken or pork.
This recipe works just fine over a gas flame, making it even easier to whisk as it cooks.
