Graham
Crackers
Stir
together:
1 cup
white flour
2 cups
Doug’s multi-grain flour mix
2 tbsp
gluten flour
1 tsp
baking powder
½ tsp
baking soda
1 tbsp
cinnamon
¼ tsp
salt
In
separate bowl, blend till fluffy:
½ cup
brown sugar
½ cup
shortening
1 egg
¼ cup
honey or maple syrup
1 tsp
vanilla
Add
alternately while mixing:
The flour
mixture and ½ cup milk until it forms into a dough ball
Wrap in
plastic wrap and chill at least 2 hours.
Preheat
oven to 350°s.
Divide
dough into 4 parts.
Dust
rolling surface with a flour/cinnamon mixture and roll each section out to 1/8
inch. Transfer to a cookie sheet coated with the cooking spray. Score dough by
making lengthwise and crosswise cuts that don't go all the way through. I use a
pizza wheel.
Bake for
15 minutes or until lightly browned. Remove from pan; cool completely on
newspaper or paper towels. Break along score lines into individual crackers.
