Add to blender or food-processor:

1 large or jumbo egg (preferably fresh from under your own hen), 1 tsp sugar, 1/2 tsp salt, 1 tsp ground mustard or prepared mustard sauce.

In a 1-cup measure pour nearly 1 cup of cooking oil and finish filling with lemon juice. With the blender or processor running, slowly pour in the oil/lemon juice mixture, while stirring the oil at the same time to mix the lemon juice into it as it flows into the blender. The mayo should come together within 15 seconds. Do not blend longer than needed or the mayo will fall apart and fail. This may not work for you in really bad weather as the air pressure has an effect on how it emulsifies.
