Any time a recipe calls for white sauce:
In a saucepan, melt 1 Tbsp of butter.
Add a rounded Tbsp of my multi-grain pancake mix, instead of the usual white flour you use for white sauce,
and whisk over low heat until butter is absorbed.
Remove from heat and whisk in a little less than 1 cup of milk or cream.
Return to heat and whisk as it cooks until thickened to the consistency you need for the recipe you're using.
Add this to 2-3 cups of tomato juice to make cream of tomato soup.
