Blueberry Coffee Cake
(Makes a 9 x 9 pan, double ingredients for a 9 x13 pan)
¼ c. salad oil 1 ½ c. all-purpose flour
1 beaten egg (may substitute ¼ the amount with
½ c. milk whole wheat or multi-grain flour)
¾ c. sugar 2 tsp. baking powder
½ tsp. salt 1 ½ c. blueberries, fresh or frozen
Cinnamon sugar if desired.
Combine oil, egg, and milk. Sift together dry ingredients, add to milk mixture, mix well. Pour into greased pan. Sprinkle with cinnamon sugar for topping if desired
Bake at 375 degrees for 25 minutes.
