Fish
or Seafood Chowder
Melt
2 TBS butter in a pot
Sauté
1/2 cup diced onion
Peel
(or not) and chunk 6-8 potatoes
Add
water to just barely cover potato
Place
fish fillet (3/4 – 1 pound of haddock or other white fish/seafood) on top of
potatoes
Cover
and cook until potatoes are cooked
Chunk
up fish
Add
1 can evaporated milk per fillet.
Serve
when hot
Adjust quantities depending on number of
guests coming to dinner:)
