Mix up the basic pancake mix from the Hearty Pancake page.
Instead of eggs and fruit, just mix in enough yogurt and spices to taste like what you want in a cracker.
Knead as you would bread dough, adding flour or more of the basic mix, until you have a ball of dough that will hold together to roll out flat. Cut the dough into tennis-ball chunks and roll each out to about half the thickness you want the finished crackers to be. They will rise as they bake.
Move the rolled dough to a cookie sheet which you have greased or sprayed with Pam or something like it. Cut the rolled-out dough to the shapes you want the crackers to be. I often use a pizza cutter to do this. You don't need to separate the individual crackers at this point.
Pre-heat the oven to 350 degrees and then bake the crackers for about 12-15 minutes - till golden brown. When you take them out of the oven break them apart as you slide them onto newspaper to cool. They will easily break apart on the scored lines you cut.
To make them more like shortbread, you can use cream cheese (try flavored cream cheese) instead of yogurt. Like all these recipes, modifying them is encouraged. Don't forget to send a note so we know if you liked them or changed them in a way we might like to share with others.
