Flat Bread

Flatbread ingredients:
1 c. Doug’s Multigrain flour mix: http://www.dougspalding.com/batter.htm

1/4 tsp. baking powder
1 1/2 tsp. extra virgin olive oil
2 Tbsp. chives, sliced
1 tsp. Kosher salt
1/4 tsp. white pepper
1 Tbsp. lovage, chopped (substitute Italian flat leaf parsley, sun-dried tomatoes or about anything else that strikes you as tasty)
1/3 c. cold water

Flatbread preparation:
1. Place flour, baking powder, herbs, salt, and pepper in a bowl. Mix well.
2. Blend in oil.
3. Work in cold water until dough has a consistency of bread dough.
4. Let rest for one hour. Roll out using a pasta machine to just under setting #1. No pasta machine-use a rolling pin
5. Grill or bake until nearly crisp and then cut into triangles.

Yield: 8 portions
