In blender or food processor, dissolve 1 envelope of un-flavored gelatin in 1½ cups of milk.
Let stand for 5 minutes.
While blender is running (slow) add ½ Cup of sweetener (sugar or substitute), 2-3 large eggs, 1 cup of any soft, seedless fruit. If using strawberries, drain excess liquid first.
Heat on high for 4 minutes in microwave, stirring every minute, or on medium heat on the stovetop while whisking or stirring constantly to avoid scrambling the eggs before they cook smoothly.
Add 1 Tbsp vanilla or almond extract, or any other flavor you like that will enhance the fruit you used. Hooch works just fine.
Pour into dessert dishes and garnish with fresh fruit and a mint sprig at serving time.
